Do you love mac and cheese and are you looking for a healthy alternative without processed ingredients? Try this Mac No Cheese recipe. You won’t believe it’s vegan, too.
If you are vegan you may seen dairy-free cheese alternatives in supermarkets, including cheddar. I personally love it but I try to avoid as much possible processed foods. So I came up with this recipe and I love it just as much.
It’s made with cashew cheese. You just need a food processor or a blender and it’s ready in less than 5 minutes. However you should consider to soak the cashews in water at least 6 hours before to use them. The longer they stay in water, the better. If you are craving this and you want to eat this now, you can speed the process a bit by soaking them in hot water for 30-45 minutes or boiling them for 15 minutes. If you have the time, I’ll recommend you to choose the first option.
The nutritional yeast gives the cheesy taste. If you are not familiar with this, it’s a species of yeast, the same that makes bread grow. Don’t worry, it’s not an animal. It belongs to fungus family like mushrooms. Beside the taste, nutritional yeast has a lot of benefits for health. It has all the nine amino acids, the body can’t produce. You’ll find in shops even fortified versions with B12 vitamin.
Turmeric gives the pretty yellow color. You may know this from curry powders. It tastes bitter and earthy. It is a great anti-inflammatory and antioxidant.
