Soba noodles are a type of noodles made of buckwheat, which have a lot of health benefits compared to rice or wheat noodles. The authentic version has 100% buckwheat flour and water. In supermarkets you’ll often find soba noodles made of buckwheat and wheat flour combined in different proportions.
Use light soy sauce or dark soy sauce. The best is to use a combination of both. The difference between them is that light soy sauce is saltier but less colorful than dark soy sauce. So if you only use the light one, your meal will be salty, but not so rich in soy sauce flavor. And if you only use the dark one, the flavor will be too strong. The key is to create balance between saltiness and flavor and that is why is better to combine both. If you want a gluten free meal, use tamari instead of soy sauce.
If you can’t find sesame oil in the supermarkets or you don’t have it in the kitchen, simply replace it with any oil. Same goes with vinegar, use any vinegar you have.

150 g soba noodles one avocado one carrot two small spring green onion 2 tablespoons sesame seeds For the sauce: 3 tablespoons peanut butter 5 tablespoons soy sauce 1 tablespoon sesame oil 1 tablespoon rice vinegar 1 tablespoon maple syrup 1/3 cup water Step 1: cook the noodles following the package instructions Step 2: wash the carrot and spring onions. Cut the carrot using a potato peeler ( or simply cut it with a knife in slices). Chop the spring onion. Cut the avocado in small cubes.
