Are you are looking for a quick and delicious meal? This One Pot Sun Dried Tomatoes Pasta recipe is perfect for you.
This is a one-pot meal, so it’s quick and easy to prepare. You just cook the onion and the garlic, then add the rest including the pasta and just leave it for 18-20 minutes. And your meal is ready to serve.
You can use any type and shape of pasta. Pasta has gluten, so substitute it with the gluten free version, if you want a gluten free meal. I used whole grain spaghetti for this recipe.
Sun dried tomatoes have a much stronger taste than fresh tomatoes. They are dried in such a way that the nutrients don’t deteriorate in the process. It may be a little hard to crew them dried, but when you cook them they absorb the liquid and get soft.
The nutritional yeast gives the cheesy taste. If you are not familiar with this, it’s a species of yeast, the same that makes bread grow. Don’t worry, it’s not an animal. It belongs to fungus family like mushrooms. Beside the taste, nutritional yeast has a lot of benefits for health. It has all the nine amino acids, the body can’t produce. You’ll find in shops even fortified versions with B12 vitamin.
