It will bring instant joy in your life. And it’s 100% healthy. It’s is simply amazing, how this planet provides us with food is such beautiful and vibrant colors.
The Red Cabbage Phanomenon
You are probably wondering how to get that nice blue color. Red cabbage has anthocyanin and when cooked, it release this blue pigment, depending on the PH. If you boil the cabbage in water, then strain the water and cook white rice noodles in it, they will become blue. If you add some acid, like lemon juice, they will become pink right in front of your eyes. If you add some alkaline juice, they will become green/ turquoise.
To create the rainbow you’ll need:
- Red: red peppers
- Orange: carrots
- Yellow: sweet corn
- Green: spring onions
- Blue: rice noodles cooked in red cabbage water
- Indigo: let me know if you have an idea of ingredient with this color. I let it aside, as it is confusing for most people
- Violet: red cabbage (which in reality is actually purple, and not at all red)
You can play with the colors and ingredients, how you like. The recipe works best with peanut butter sauce, but feel free to change it.

2 portions rice noodles 6-8 red cabbage leaves 2 tablespoons olive oil 1 onion 6 cloves garlic 1 tablespoon sesame seeds 1 red pepper 1 carrot 1/4ย red cabbage 1 cup sweet corn 1 spring onion 4 tablespoons peanut butter 4 tablespoons soy sauce 4 tablespoons warm water 1 tablespoon rice vinegar 1 tablespoon sesame oil 1 tablespoon maple syrup 1/2 teaspoon chili flakes Step 1: boil 6-8 red cabbage leaves in water for 15 minutes. The red cabbage should stain the water. Then, add the noodles and cook them according to the package instruction in that water. They will become blue Step 2: chop all the veggies Step 3: in a high pan, add the onion, garlic and sesame seeds and cook for 3 minutes. Add the rest of the veggies (except the spring onion) and cook for another 20 minutes Step 4: mix all the sauce ingredients together Step 5: combine the noodles, the cooked veggies and the sauce. Add the spring onion on top and sprinkle some sesame seeds Step 6: eat the rainbow and enjoy
