If you like beetroot, this Vegan Feta and Beetroot Pasta is perfect for you. You can’t say no to this delicious and vibrant red colored meal. It’s almost effortless to make it.
This will have a strong earthy taste from the beetroot. You have to like beetroot to enjoy this recipe. They have a lot of health benefits, including boosting your immune system and protecting your heart from strokes and other diseases.
I choose to boil the beetroot, when I cook in small quantities. You can also roast it in the oven or even buy it cooked from supermarkets. If you choose this option, look for them in the fresh product section. The ones from jars won’t work as they are pickled.
You’ll find vegan feta it in many supermarkets, also as a vegan white block or vegan Greek cheese. If it’s not available to you, simply do the recipe without. It’s delicious regardless.
You can use any type and shape of pasta. Pasta has gluten, so substitute it with the gluten free version, if you want a gluten free meal. I used whole grain spaghetti for this recipe.
Tools you’ll need for this recipe:
- a blender
200 g pasta ( 2 portions) 1 beetroot 1/2 vegan feta block ( 100g) 1/4 cup warm water 1 tablespoon olive oil juice of 1/2 lemon 1 clove garlic some fresh basil leaves salt and pepper to taste Step 1: wash the beet. In a small pot add enough water to cover the beet and boil it for approx. 30 minutes ( check with a fork) and then rub the skin with your fingers. I do this under cold water so my fingers don't get burnt.
