Saving the oceans and still enjoying an all time favorite classic recipe? This Vegan Scallops with Kale Salad recipe is using king oyster mushrooms, instead of harming the marine ecosystem. The taste and texture are quite similar and the best part it is that is 100% cruelty free. Scallops are molluscs, which classifies them as animals and are not vegan.

This recipe uses king oyster mushrooms as an alternative to marine meat. They are definitely the winner for the texture and shape. Also they don’t have a particularly taste and they act as a sponge. That’s why this recipe requires some time to marinate. They will get the fishy taste from the nori sheet, the more they marinate. Cooked in vegan butter and garlic and served with some kale salad, this recipe will for sure not disappoint.

Ingredients

3 king oyster mushrooms (300 g)

 

1 nori sheet

1 cup water

2 tablespoons soy sauce

1 tablespoon maple syrup

 

a large knob vegan butter (50 g)

4 cloves garlic

juice of 1/2 lemon

 

kale salad or other side dish of your choice

Instructions

Step 1: wash and cut the king oyster mushrooms stems

Step 2: in a food container mix the nori sheet, the water, the soy sauce and the maple syrup. then let the mushroom marinate for at least one hour (the more they stay, the more flavored they get, so overnight is best)

Step 3: in a pan, add the vegan butter and the chopped garlic. cook for 2-3 minutes. then add the mushrooms stems and cook 5 minutes on each side (10 minutes in total for both sides)

Step 4: squeeze half lemon on the vegan scallops and add salt and pepper to taste

Step 5: pair the scallops with your kale salad, rice, potatoes or even bread

Step 6: enjoy
