If you love potatoes, this Asian Wood Ear Potatoes recipe is perfect for you. 100% vegan and delicious. This is an easy recipe and you don’t need many cooking skills. You’ll have to bake the potatoes, to boil the wood ear mushrooms, to chop the spring onion and when they are ready to mix them with soy sauce and sesame oil.
I only used a simple sauce for this recipe – the soy sauce, but feel free to try something more complex, like the Asian brown sauce or the spicy vegan mayo.
What are wood ears mushrooms and how to cook them
Wood ear mushrooms are edible mushrooms, often used in Asian cuisine. They don’t have a strong taste by their own, they taste a bit earthy but they do gave an interesting texture – a bit gelatinous and a bit crunchy.
Some supermarkets sell them fresh, but you’ll find them dry in most Asian stores. For the fresh one, you’ll only have to wash them and throw them in boiling water for 4-5 minutes. For the dry ones, you’ll have to soak them in a bowl of water for at least two hours. After rehydration, boil them for 5 minutes. Never eat them raw.
6 medium potatoes 1 cup wood ear mushrooms (150 g) 1 spring onion 1 tablespoon sesame oil 1/4 cup soy sauce Step 1: peel and wash the potatoes. Cut them in thin slices and place them in a tray with baking paper. Cook them in the oven at 200 C/ 400 F for approx. 30-35 minutes Step 2: bring water to boil and then add the wood ear mushrooms.
