Spicy Roasted Potatoes

If potato is your spirit veggie, then this Spicy Roasted Potatoes recipe is perfect for you. This is easy to prepare and you don’t need cooking skills. You only need to peel, wash the potatoes and come back in 40 minutes. Feel the magic in every bite.

I think this is one of the best and healthiest ways to cook potatoes.

If you lower the temperature and cook the potatoes a longer time they will have a slightly crispier skin.

You can also turn the heat up to 220 C/ 430 F and your potatoes will be ready in 30 minutes. This is perfect when you don’t have that much time.

Add your favorite toppings and your delicious meal is ready. You can literally use any veggie or sauce you like.

  • For a Mexican dish add avocado, chili peppers, sweet corn and red or black beans.
  • For a Mediterranean dish add falafel, vegan feta cheese, olives, tomatoes and cucumbers.
  • Another option is to use pickled cucumber, fresh dill, vegan mayo and lemon juice on top.

Or you can choose not to add toppings at all and use them as a side dish.

Spicy Roasted Potatoes

Ingredients

6 medium potatoes

2 tablespoons olive oil

1 tablespoon paprika

1 teaspoon chili flakes ( add more or less)

salt and pepper

 

1 avocado

1 small red onion

fresh parsley

2 chili peppers

2 tablespoons vegan mayo

Instructions

Step 1: peel, wash and cut the potatoes

Step 2: on a tray with baking paper add the potatoes and add the olive oil and spices

Step 3: heat the oven at 200C/ 400F and bake 40-45 minutes

Step 4: mash the avocado, chop the onion, the parsley and chili pepper

Step 5: when the potatoes are ready add mayo, avocado, chili pepper, onion and parsley on top. You can any toppings you like

Step 6: enjoy
