White Bean and Leek Soup

I have a delicious heart warming recipe for you – the white bean and leek soup recipe with a subtle spicy taste from the jalapeno. This is an easy recipe. Anyone can make it and it’s ready in less than 25 minutes. All you need to have is the vegetable broth already cooked. Just follow the recipe instructions and enjoy.

The leeks will add magic to your bowl

So if you haven’t used leeks in your recipe before, just know that leeks belongs to the botanical family Alium like onions, garlic, shallots and chives. Leeks have a sweet onion taste. People usually use the white part and the light green one of the leek. Please note that the dark green part is also edible. But it’s less tender than the other and it needs to be sauteed a bit more. I suggest you to also integrate this dark green part to your recipes, so that it won’t go to waste.

How to wash the leeks

It’s important to know how to wash the leeks. First you chop the leek. There is no need to start by washing the leek first, as most of the dirt hides under the layers and not on the surface. Then add your chopped leek in a sieve and wash everything well under running water.

Ingredients

1 leek

1 onion

4 tablespoons olive oil

8 cups vegetable broth

1 can white beans (400 g)

1 vegan cooking cream (250 ml)

1 red pepper

1/2 jalapeno

3 fresh thyme branches/ 2 teaspoons dry thyme

1/2 hand fresh dill

salt and pepper to taste

Instructions

Step 1: chop the leek and put it into a sieve. Then wash it well under running water (there is dirt hidden under layers)

Step 2: chop the onion, the bell pepper and the jalapeno

Step 3: in a high pan or pot add the olive oil.  After it's heated add the leek, the onion, red pepper and jalapeno. Cook for 5 minutes

Step 4: add the vegetable broth, the cooked white beans and thyme and cook for another 15 minutes

Step 5: turn off the heat and add the vegan cooking cream, the chopped fresh dill and salt and pepper to taste

Step 6; enjoy warm
