This chickpea and avocado salad recipe is perfect for a quick meal. It’s ready in 5 minutes and you don’t have to put any effort. Who says salads are boring? This one is so delicious and packed with lots of nutrients, that will keep you fueled for a long a time.

The avocado, chickpeas and vegan feta goes together like magic. But feel free to customize the recipe based on your own preferences or what you have in the kitchen at this moment. Boost the nutrients, by adding some nuts and seeds.

You can replace the lime juice with the juice of a 1/2 lemon and the olive oil with any other oil. I would recommend you to use only cold pressed oils though ( like avocado oil, virgin olive oil, walnuts oil, etc.).

I use canned chickpeas, but you can also use dried chickpeas and cook them yourself.

Check for vegan feta cheese in supermarkets. You can also find it as vegan white block or vegan Greek cheese.If you can’t find vegan feta cheese in your local stores, the recipe is still delicious without it.

Ingredients

1 can chickpeas

1 avocado

150 g vegan feta cheeseĀ 

one small spring onion

1 tablespoon olive oil

juice of one lime

1/2 teaspoon dry thyme

1/2 teaspoon dry oregano

1/2 teaspoon dry rosemary

salt

Instructions

Step 1: cut the avocado in cubes, remove the water from chickpeas, chop the spring onion and cut the vegan feta cheese in cubes ( or simply crush it in your hand)

Step 2: mix everything in a bowl

Step 3: enjoy
