This Leek and Potato Soup recipe is the proof that healthy recipe can be absolutely delicious.
The leeks will add magic to your bowl
So if you haven’t used leeks in your recipe before, just know that leeks belongs to the botanical family Alium like onions, garlic, shallots and chives. Leeks have a sweet onion taste. People usually use the white part and the light green one of the leek. Please note that the dark green part is also edible. But it’s less tender than the other and it needs to be sauteed a bit more. I suggest you to also integrate this dark green part to your recipes, so that it won’t go to waste.
How to wash the leeks
It’s important to know how to wash the leeks. First you chop the leek. There is no need to start by washing the leek first, as most of the dirt hides under the layers and not on the surface. Then add your chopped leek in a sieve and wash everything well under running water.
4 tablespoons olive oil 8 cups water 1 vegan cooking cream (1 cup/ 250 ml) 1 leek 1 onion 4 cloves garlic 4-5 medium potatoes 1 carrot 1 cup frozen peas 1 teaspoon dry thyme 1 teaspoon dry oregano 1/2 hand fresh parsley 1/2 hand fresh dill juice of 1 lemon salt and pepper to taste Step 1: chop the leek and put it into a sieve. Then wash it well under running water (there is dirt hidden under layers) Step 2: chop the onion, garlic, the carrot Step 3: add the olive oil in a pot, turn on the heat and cook the chopped veggies (leek, onion, garlic and carrot) for 5 minutes Step 4: meanwhile peel and chop the potatoes Step 5: add the water, the potatoes, the dry thyme and oregano and cook for 35 minutes Step 6: add the frozen peas and the vegan cooking cream and cook for another 5 minutes Step 7: at the end add the lemon juice and the freshly chopped parsley and dill. Add salt and pepper to taste Step 8: enjoy
