No Bake Easy Tiramisu

You’ll become addicted to this subtle coffee flavored dessert. Using just a few ingredient. This No Bake Easy Tiramisu recipe is so easy to make.

Tiramisu is an originally Italian dessert. The original recipe is not vegan. As it uses a cream layer made of mascarpone and egg yolks. And another layer of ladyfingers dipped in coffee. I made this recipe vegan and a lot easier, as vegan ladyfingers might be not that easy to find.

You need to soak the cashew 4 hours ahead. If you don’t have that much time simply add them in hot water for 10-15 minutes. Then I blend the cashews with the agave and 1 tablespoon coconut milk first, then add the rest of the coconut milk. If you have a performant food processor, you can simply blend everything from the beginning.

Instead of ladyfingers, you will use simple vegan biscuits. It can be any brand, as long as you like it. Take a few biscuits in your hand and soak them in espresso for 3-4 seconds or until they are soft. In a glass or the recipient you will use add a layer of biscuits and a layer of the cashew “mascarpone”.

Ingredients

100 g vegan biscuits

1 cup espresso

1/2 cup cashews ( soaked in water at least 4 hours)

1 can coconut milk ( only the solid part)

5 tablespoons agave/ maple syrup

2 teaspoons cocoa powder

Instructions

Step 1: for the mascarpone layer blend until smooth the cashews, the agave syrup and one tablespoon of coconut milk

Step 2: add the rest of the coconut milk and blend everything together

Step 3: soak the biscuits for 3-4 seconds each in the espresso

Step 4: in a glass add layers of 5-6 soaked biscuits and 3-4 tablespoons of mascarpone

Step 5: add one teaspoon of cocoa powder on top

Step 6: put the glasses in the fridge and wait 1 hour before enjoying them
