Are you looking for an easy and healthy meal? This One Tray Roasted Tomato Soup is perfect for you. You don’t need cooking skills for this recipe. You just place the veggies in the oven and then blend everything.
I use a ceramic oven safe tray. Depending on the tray you have, you might also need to use baking paper.
You’ll only need to cut the tomatoes and the onion ( it’s not important to be the perfect cut, cause you’ll blend them later anyway) and place them with the garlic cloves, olive oil and herbs. Feel free to use any herbs you like. I thing thyme and basil works the best. Use the herbs fresh, if it’s possible. If you won’t use fresh basil and choose to use dry basil, place it with the thyme in the tray and not at the end, when you blend everything
I served it with bread and added herbs infused oil and vegan cooking cream on top.
