Stovetop Easy Tomato Soup

Warm up your heart with this delicious Stovetop Easy Tomato Soup recipe. It’s ready in less than 30 minutes and you don’t put much effort into cooking it. And you only need a few ingredients.

This is a really simple recipe. You just cut the veggies, cook them in your high pan or a wok for 15-20 minutes and then blend everything with water. Feel free to use other spices and herbs as well.

This works both on rainy cold days when you can enjoy the tomato soup warm and on hot summer days when you can have it cold. Serve it with vegan cooking cream, some fresh bread, more herbs on top and some seeds, that will give you the omega-3 you need. These are flax seeds, chia seeds, hemp seeds, walnuts, pine nuts, pumpkin seeds.

  • High pan or wok
  • Blender or food processor

Ingredients

6 large tomatoes

1 onion

4 cloves garlic

1 cup water

4 tablespoons olive oil

1/2 hand fresh basil ( or 1 teaspoon dry basil)

some fresh thyme leaves ( or 1/2 teaspoon dry thyme)

salt and pepper

Instructions

Step 1: chop the onion and garlic. Cut the tomatoes ( big cubes)

Step 2: heat the oil in a high pan and cook the onion and garlic for 2 minutes

Step 3: then add the tomatoes, the thyme ( and dry basil if you don't use it fresh)  and cook until soften ( 15-20 minutes)

Step 4: transfer everything to a blender or food processor. Be careful cause it's hot. You may wait a bit to cool down if you want

Step 5: blend it with the fresh basil and water. You can use more or less water, depending on the consistency you want

Step 6: add salt and pepper to taste

Step 7: add toppings ( I used vegan yogurt, pumpkin seeds, flax seeds, pine nuts, fresh basil and thyme

Step 8: enjoy warm or cold
