You might love this vegan and delicious Potato Salad recipe, perfect for lunch or dinner. It’s effortless to make and you can easy use this recipe for meal prep.
To make this salad, you’ll have to start with the potatoes. I have to mention that this is the easiest way to cook them. You will need 6 large or 8 medium potatoes. Just wash them and bring them in a pot. You don’t have to peel them. Cover them with water and cook them for approx. 25 minutes. Always do the test with a fork and check if they are soft.
While the potatoes are cooking, add the rest of the ingredients in a large bowl and mix well.
Carefully remove the potato skin. Leave them to chill a bit or if you are in a hurry, peel them under cold running water. Cut the potatoes in small cubes.
Chose any brand of vegan mayo that you like. Be aware that not all of them taste good. For a healthier version, choose to make the vegan mayo yourself from cashews.
6 large potatoes 1/2 cup sliced olives 1 carrot 2 tablespoons capers 1 red onion 1 hand fresh dill 1 tablespoon olive oil 3 tablespoons vegan mayo 1/2 tablespoon mustard salt to taste Step 1: wash the potatoes (you don't have to peel them) Step 2: in a pot, add the potatoes and cover them with water. Also add the olives and capers Step 5: peel the cooked potatoes (be careful cause they are hot and you might burn your fingers).
