Everyone’s favorite recipe from the Portuguese cuisine, vegan version. So simple, yet so delicious, The Vegan Caldo Verde is the perfect meal for anyone.
The traditional recipe is not vegan. It contains meat – a traditional Portuguese sausage, similar to Chorizo. To replace it, you can use vegan alternatives to sausages. And if you don’t like processed food, you can use smoked or simple tofu instead.
The traditional recipes also uses collard greens, instead of kale. Collard greens are more common in Portugal, but kale is more common in supermarkets worldwide. They both come from the cabbage family, but their texture and taste are slightly different. You can freely use any of them.
The process of preparing this soup is simple. You need to break the sausages in small pieces and fry them in oil for a couple of minutes. Remove the sausages and in the same oil start cooking the onion and garlic. Then add the broth, water and the potatoes. When everything is cooked, add salt and pepper to taste and blend it. Put everything back in the pot, add the kale and cook for a couple more minutes. Add the sausages and your delicious meal is ready to be enjoyed.
