For those who say salads are boring, definitely they haven’t tried this Vegan Greek Goddess Salad. It’s so delicious and ready in just 5 minutes.
The original Horiatiki
This is a vegan version of the popular Greek salad recipe, often called Horiatiki Salad. It was created with the ingredients usually Greek farmers had in the kitchen. Feta cheese, tomatoes, cucumbers, olives, onions, olive oil and oregano.
Greek staple ingredients:
- feta cheese- use vegan alternative
- tomatoes
- cucumbers
- olives- mostly they use Kalamata, but any type works
- onions
- olive oil- only use cold pressed, virgin
- oregano
You can easily make it vegan by using vegan feta cheese instead. You’ll find it in many supermarkets, also as a vegan white block or vegan Greek cheese. If it’s not available to you, simply do the recipe without. It’s delicious regardless.
I also added chickpeas to the recipe to add protein to the recipe. And they fit perfectly with the veggies.
Other ingredients to add in your salad:
- chickpeas
- any type of fresh greens
- fresh dill
This salad recipe is a complete meal, but feel free to customize it on your own taste and the ingredients you have at that moment in the kitchen.
