This easy creamy pea soup recipe is ready in 20 minutes. It’s also budget friendly, as you don’t need many ingredients to prepare it. The result it’s incredible. It’s almost effortless to prepare. You just need to chop some onion and garlic, cook for a bit and then blend everything.

If you want something more flavorful, you can replace the water with vegetable broth.

Instead of the olive oil, you can also use vegan butter.

Also fresh mint leaves works amazing with peas. You can blend some fresh mint leaves with the rest of the ingredients at the end. I avoid the combination of mint with anything savory, but a lot of people are crazy about this. I like the combination of peas with thyme better, but feel free to use any herb you like.

Add half teaspoon of chili flakes for a spicy subtle taste.

Use frozen peas for this recipe, they work better than fresh or canned ones. Peas are a good source of vegan protein and are rich in so many vitamins and minerals.

Serve it with some seeds on top and some vegan cream. I used pumpkin seeds, pine nuts, fresh grounded pepper, hemp seeds and vegan cream.

Ingredients

3 cups ( 450 g) frozen peas

5 cups water

1 onion

4 cloves garlic

1 teaspoon dried thyme

2 tablespoons olive oil

salt and pepper to taste  

Instructions

Step 1: chop the garlic and onion

Step 2: heat the oil in a high pan or pot. Add the garlic and onion and cook for 3 minutes

Step 3: add the frozen peas, water and dried thyme. You can use others herbs too. Cook for another 15 minutes

Step 4: transfer everything to a blender. Make sure your blender it's heat resistant or otherwise wait a bit to cool down. A vertical blender also works, but you need to separate the liquid

Step 5: add salt and pepper to taste

Step 6: enjoy
