Hungarian Goulash with Tofu

You have to try this Hungarian Goulash with Tofu recipe. It’s so delicious and it’s ready in less than 20 minutes.

Goulash is actually a soup or a stew with a strong paprika flavor, originally from Hungary. The traditional recipe is not vegan, but I replace the meat with tofu and the result was incredible. I used a smoked tofu block, but it works with simple tofu as well if you can’t find that in supermarkets.

For this recipe, it’s best to use Hungarian paprika. It’s a lot different from the regular paprika. You can find more types in store: sweet, hot, smoked sweet. Use any of them, depending on your taste and feel free to add more for a much stronger flavor.

I use tomato sauce, the one that also works for the tomato pasta sauce. You can also replace it with concentrated tomato paste and mix it with water.

You can add more spices or herbs, if you like, but I think that caraway seeds are the perfect match for this recipe.

Serve the goulash with mashed potatoes, bread, rice or pasta.

Ingredients

2 tablespoons olive oil

1 onion

4 cloves garlic

1 red bell pepper

1 small carrot

1 block smoked tofu ( 200g)

1 cup tomato sauce

1 cup water

1 tablespoon Hungarian Paprika powder ( sweet/ smoked/ spicy)

1 teaspoon caraway seeds

salt and pepper to taste

 for serving: mashed potatoes/ rice/ fresh bread/ pasta

vegan cooking cream/ yogurt

fresh dill or parsley

Instructions

Step 1: wash the veggies. Chop the onion and garlic and cut in small cubes the bell pepper, carrot and tofu

Step 2: heat the oil in a pan and add the garlic and onion. Cook for 3 minutes

Step 3: add the bell pepper, carrot, tofu, tomato sauce, water, caraway seeds and paprika. Cook for another 12 minutes

Step 4: add salt and pepper to taste

Step 5: serve it with mashed potatoes, rice, bread and vegan cooking cream or yogurt. Add fresh dill or parsley
