If you are an oatmeal lover or you are looking for an easy and delicious breakfast recipe, this “Raffaello” Stovetop Oatmeal is perfect for you. This is inspired by the Raffaello candy ( not vegan), which are some pralines with milk cream and an almond in the middle and a desiccated coconut layer.

This recipe is vegan and it replace the creaminess of the milk cream with vegan butter. Cashew or almond butter also works, but don’t use peanut butter as it will completely change the flavor.

You will also need to use desiccated coconut ( shredded coconut) for this recipe and not coconut chips.

I recommend you to use rolled oats or fine oats. They are a lot quicker to cook. But you can use any type of oats. If you are using steel cut oats, the time of cooking increases to 20-25 minutes and you will also need to add more water.

Add more desiccated coconut on top and some almond chips. Also add more toppings that you like. I used some expanded quinoa and some strawberries, cut with heart shaped cookie cutters.

Ingredients

1/2 cup oats

1/2 cup vegan milk

1 cup water

1 banana

1/4 cup desiccated coconut + more on top

1 large knob of vegan butter ( 25g)

1/2 teaspoon vanilla extract

almond chips ( on top)

Instructions

Step 1: mash the banana with a fork in a pot

Step 2: add the rest of the ingredients ( except the almond chips)  and cook until thickened ( 5-7 minutes)

Step 3: pour it in a bowl and add more desiccated coconut on top

Step 4: add other toppings and enjoy
