This Simple Vegan Pancakes recipe is perfect for every breakfast, cause we all know that happiness is a pancake breakfast.
This easy recipe is for one serving and you’ll make 4 pancakes. If you want more, simply double the ingredients. To save more time, use two pans for cooking your pancakes. This is an effortless recipe and you don’t need cooking skills at all. You just have to mix all the ingredients in a bowl using a whisk or just a spoon. Then pour one ladle in a heated pan and cook till golden on both sides.
You can use any vegan milk you like ( almond, soy, oat, etc.). I use 2 tablespoons of unrefined sugar ( like coconut sugar) and it will give you a subtle sweet taste. But any kind of sugar works. The same goes with the oil. It works with any kind of oil. If you want a oil free meal, substitute the oil with more plant based milk.
This recipe contains gluten, but you can substitute the flour with gluten free options.
Toppings are important
I think the secret to a good pancake meal is the toppings. Go crazy with the toppings you like. I usually eat them with coconut yogurt, raspberry jam, fruits and some nuts to have a whole food breakfast. Others great topping combinations are: maple syrup and bananas, salted vegan butter with blueberries, vegan chocolate spread with strawberries.
