What better way to start your day, than with vegan buttermilk waffles and a bunch of delicious toppings ?
And just because waffles are just pancakes with abs, you can use this recipe to make pancakes too.
This is an easy recipe that will require just one bowl. Start with the milk, lemon juice and the apple cider vinegar and lei it sit for 10 minutes. Then you can add everything else and the batter is ready. Depending on your waffle maker you’ll need to coat the iron with oil. It’s not necessary to this if it’s non stick. Also the waffle maker can be squared or flower shaped. Cook the waffles until golden, as the time might differ from one appliance to other.
Toppings are important:
The waffles have a subtle sweet taste and vanilla flavor. It’s best to add some toppings. Add some maple syrup, melted chocolate, fresh fruits, coconut whipped cream, ice cream, vegan butter and syrup, cinnamon sugar, chopped nuts.
Remove the coconut sugar from the recipe and you’ll get a savory recipe. You can use them as a sandwich or load them with veggies, beans or tofu.
Tools you’ll need for this recipe:
- a waffle maker
1 cup flour 3/4 cup vegan milk 1/4 cup sunflower oil ( or coconut oil) 1 teaspoon baking powder 1 tablespoon coconut sugar 1/2 teaspoon vanilla extract a pinch of salt juice of half lemon 1 teaspoon apple cider vinegar Step 1: mix the lemon juice, the apple cider vinegar and the milk. Let it sit for 10 minutes. Step 2: mix everything and you'll have the batter. Step 3: pour the battle into the waffle iron and cook until golden Step 4: add toppings ( mine were vegan nutella, strawberries, coconut chips and blueberries) Step 5: enjoy Ingredients
