This Chickpea Omelette with Chives recipe it’s the perfect for a savory breakfast or brunch. And it’s 100% vegan.
This is one of the easiest savory breakfast recipes. You just mix all ingredients together and then cook the batter as a pancake. Add some juicy veggies and sprinkle some nutritional yeast on top and it’s ready to serve.
Use a non stick pan or spray some oil on a regular one. It might be a bit difficult to flip it, as it is more fragile than a pancake. It’s best to do the flip fast or use a large spatula.
Chickpea flour, instead of eggs
Chickpea flour is basically a blend of dried uncooked chickpeas. You’ll find it in some supermarkets or organic products stores. I buy it as a flour, but you can also make it at home in a coffee grinder or high speed blender. Don’t try to use your a normal blender cause the chickpeas are too hard for it.
Chickpea flour does not contain gluten and it’s a great alternative to regular flour. And also a much healthier option as it contains more nutrients than regular flour.
