If you are bored with oatmeal and smoothie bowls for breakfast, you should try something different. The Easy Semolina Pudding recipe is perfect for you.

Semolina is made from durum wheat, the one that is mainly used in making pasta. It does contain gluten.

The best part of this recipe is that you have completely freedom on the flavors you want. You only cook the semolina with vegan milk ( any milk works) or a combination of milk and water. And for the rest you are free to use what you like. You can use any sweetener you like or even not add sugar at all. I used coconut sugar, which also gave my pudding a light brown color. If you want a white pudding, add maple syrup or fruit jam on top.

Decide which flavor you want and make your pudding. There are lots of options. I chose cinnamon, because I think it works best. But feel free to add vanilla extract, cocoa powder, fruits.

Go crazy with the toppings. Add more cinnamon, add fruits, add jam or maple syrup, add anything you like and enjoy your pudding.

Ingredients

2 cups ( 500 ml) vegan milk

4 tablespoons semolina 

2 tablespoons coconut sugar ( or maple syrup or any other sweetener)

1 teaspoon cinnamon 

any toppings you like ( I used raspberries, coconut chips, expanded quinoa, minced pistachios and maple syrup)

Instructions

Step 1: add everything in a pot and stir continuously. Cook 1-2 minutes more after it thickens and the bubbles appear

Step 2: add your favorite toppings

Step 3: enjoy
