What are the key ingredients to replace the real egg?

  • Silken Tofu Block
  • Firm Tofu Block
  • Kala Namak Salt
  • Turmeric Powder

The key ingredients are the silken tofu and the firm tofu block. They will create the perfect texture. Don’t worry, you can’t have too much tofu. To have it taste like an real egg, you have to use Kala Namak salt (known as the black Himalayan salt). To make it look yellow, use turmeric powder.

The Japanese traditional recipe also uses sugar, mayo, green onion, parsley, mustard and black pepper.

Do not skip the vegan butter part. It is what makes this sandwich delicious and moreover it makes the bread to remain dry for a long time. Use any type of bread for this recipe, but I would recommend you to use crustless white bread for the best experience.

Ingredients

1 silken tofu block (300 g)

1 tofu block (200 g)

1 teaspoon turmeric powder

1 teaspoon coconut sugar

1 tablespoon mustard

2 tablespoons vegan mayo

1 chopped green onion

1/2 hand fresh parsley

Kala Namak salt (black Himalayan salt) to taste

black pepper to taste

Instructions

Step 1: chop the parsley and green onion

Step 2: crumble the firm tofu block using your hands in a bowl

Step 3: mix well all the ingredients in the bowl

Step 4: spread butter on each slice of bread

Step 5: add the vEgg composition and assembly the sandwiches

Step 6: enjoy
