I always choose to make it in the simplest way possible. I add all the ingredients into a pot and whisk it until it’s ready (when the bubbles appear). A lot of people add the arrowroot powder with a splash of milk in a mug and mix this first. Then they add this in the rest of the milk to make sure there will be no lumps. You can choose any of these two methods. I am lazy and always do the first one and I never had a lump in my puddings.
You don’t have to bring the pudding to boil to be cooked. When it thickens, it is ready. Overcooking the arrowroot will break down the pudding.
Arrowroot instead of cornstarch
Arrowroot powder or flour is a healthy substitute of cornstarch. It comes from the arrowroot plant, has no taste and it is best used for thickening sauces, soups, stews or puddings. Arrowroot flour is naturally gluten free.
You will need a sieve and a whisk for this recipe.
2 cups vegan milk 3 tablespoons arrowroot flour 2 tablespoons coconut sugar 3 fresh passion fruits Step 1: cut the passion fruits with a knife in half. Now let half of a passion fruit aside, as you will add it later on top of your pudding. With the rest, scoop the pulp and add it in a sieve over a small bowl. Choose any method you find easy to separate the pulp from the seeds (like pressing the seeds against the sieve, mixing with a spoon). Step 2: add everything into a pot and whisk it continuously until thickened (when the bubbles appear). This should take about 5 minutes Step 3: pour the pudding into a bowl Step 4: add, on top of the pudding, the half passion fruit (seeds and pulp) and any other toppings that you like Step 5: enjoy Ingredients
