You have to try this delicious Vegan Pistachio Rose Pudding recipe. You need two key ingredients: pistachio butter and dried rose buds or rose water.
I always choose to make it in the simplest way possible. I add all the ingredients into a pot and whisk it until it’s ready (when the bubbles appear). A lot of people add the arrowroot powder with a splash of milk in a mug and mix this first. Then they add this in the rest of the milk to make sure there will be no lumps. You can choose any of these two methods. I am lazy and always do the first one and I never had a lump in my puddings.
You don’t have to bring the pudding to boil to be cooked. When it thickens, it is ready. Overcooking the arrowroot will break down the pudding.
Arrowroot instead of cornstarch
Arrowroot powder or flour is a healthy substitute of cornstarch. It comes from the arrowroot plant, has no taste and it is best used for thickening sauces, soups, stews or puddings. Arrowroot flour is naturally gluten free.
1 1/2 cups vegan milk 3 tablespoons arrowroot flour 2 tablespoons agave syrup (or any other sweetener) 2 tablespoons pistachio butter 1/2 cup water 10 dried rose buds Step 1: bring the rose buds and water to boil. remove the rose buds Step 2: add everything into a pot and whisk it continuously until thickened (when the bubbles appear).
