Are you craving a delicious pudding, but you also want something healthy? This Arrowroot Vanilla Pudding recipe is perfect for you. It’s so easy to make and ready in 5 minutes.

I always choose to make it in the simplest way possible. I add all the ingredients into a pot and whisk it until it’s ready (when the bubbles appear). A lot of people add the arrowroot powder with a splash of milk in a mug and mix this first. Then they add this in the rest of the milk to make sure there will be no lumps. You can choose any of these two methods. I am lazy and always do the first one and I never had a lump in my puddings.

You don’t have to bring the pudding to boil to be cooked. It’s ready when it’s thickened. Overcooking the arrowroot will break down the pudding.

Arrowroot instead of cornstarch

Arrowroot powder or flour is a healthy substitute of cornstarch. It comes from the arrowroot plant, has no taste and it is best used for thickening sauces, soups, stews or puddings. Arrowroot flour is naturally gluten free.

Ingredients

2 cups vegan milk

3 tablespoons arrowroot flour

2 tablespoons coconut sugar

1 teaspoon vanilla extract

1/2 teaspoon turmeric  

Instructions

Step 1: add everything into a pot and whisk it continuously until thickened (when the bubbles appear). This should take about 5 minutes

Step 2: pour the pudding into a bowl

Step 3: add your favorite toppings

Step 4: enjoy
