Carrot count as vegetable, doesn’t it? Anyway… I have a healthy and delicious recipe for you: The Carrot Cake Stovetop Oatmeal.

Transform your everyday oatmeal by adding a carrot and vanilla flavor. All you have to do is to grate the carrot, add all the ingredients into a pot and cook for 5 minutes. Optional you can add chopped walnuts or almond chips. Then all you have to do is to add your favorite toppings and enjoy your breakfast.

This is a stovetop oatmeal recipe. I always prefer the stovetop oatmeal, instead of overnight oats, because it is a much comfy breakfast. And heart warming also.

I recommend you to use rolled oats or fine oats. They are a lot quicker to cook. But you can use any type of oats. If you are using steel cut oats, the time of cooking increases to 20-25 minutes and you will also need to add more water.

It is really that easy to have an amazing and nourishing breakfast to start the day with good energy.

Ingredients

1/2 cup oats

1/2 cup vegan milk

1 cup water

1 carrot

2 tablespoons maple syrup

1 teaspoon vanilla extract

 

almond chips/ walnuts (optional)

 

Instructions

Step 1: grate the carrot

Step 2: add the oats, the water, the plant based milk and the carrot into a pot and cook for 5 minutes

Step 3: when it's done, add the maple syrup, the vanilla extract, some almond chips and some chopped walnuts (optional)

Step 4: add your favorite toppings

Step 5: enjoy
