If you are a semolina pudding lover, I have a creamy and delicious (my cat Miguel approves) recipe for you: the Coconut Vanilla Semolina Pudding. It takes less than 10 minutes to prepare this pudding. You can either serve it warm or cold. It is also perfect for meal prep or to pack it as a dessert in your lunch box.
Semolina is made from durum wheat, the one that is mainly used in making pasta. It does contain gluten.
The coconut milk from the can adds a lot of creaminess to the recipe. Simply replace it with plant based milk, if you want a lighter texture.
The beauty of this recipe is that you can play with flavors. Replace the vanilla or even add another flavors like rose petals, the peel of a lemon or lime (only use organic and grate only the yellow or green part, as the white part is bitter), saffron, nutmeg, cinnamon.
Add any sweetener works for this recipe – maple syrup, coconut sugar, etc.
Go crazy with the toppings. Add, add fruits, add jam or maple syrup, add nuts and seeds and add anything you like to make your breakfast perfect.
