Are you tired of eating the same oatmeal recipe everyday? Try something new. I have a delicious vegan breakfast recipe: the Lemon Poppy Seed Oatmeal.
This is a stovetop oatmeal recipe. I always prefer the stovetop oatmeal, instead of overnight oats, because it is a much comfy breakfast. And heart warming also.
It is important to note that you will use the zest of one lemon. The zest is only the bright colored yellow part of the lemon, not also the white part. The white part will make your meal bitter. As you will be using the outer layer of the lemon, you need to keep in mind that they often spray the lemons with pesticides or coat them with a fungicide wax. To avoid all of this I recommend you to buy untreated/ organic lemons.
I recommend you to use rolled oats or fine oats. They are a lot quicker to cook. But you can use any type of oats. If you are using steel cut oats, the time of cooking increases to 20-25 minutes and you will also need to add more water.
It is really that easy to have an amazing and nourishing breakfast to start the day with good energy.
1/2 cup fine or rolled oats 1 cup water 1/2 cup plant based milk 1 banana 1 small lemon ( juice and zest) 2 tablespoons maple/ agave syrup (or any other sweetener) 1 tablespoon poppy seeds Step 1: Juice and zest the lemon ( only the thin outer zest, bright colored not the white part) Step 2: in a pot, mash the banana with a fork Step 3: add the rest of the ingredients and cook for approx. 5 minutes Step 4: add some toppings Step 5: enjoyIngredients
