This is an easy recipe and require minimal effort. You just add all the ingredient in one pot and stir occasionally. You don’t need to cook rice separately.
Serve it with fruits like mangos and raspberries to create the perfect balance.
The key ingredient is the coconut milk
The rice pudding is dish made of rice cooked in water or milk, or even a combination of both and sugar. And usually is flavored with cinnamon, nutmeg, jam or vanilla. Short-grained rice is typically used for this recipe, but it can be any type of rice. I used whole grain rice for this. All types of rice are naturally gluten free.
To make the pudding creamy, I used canned coconut milk ( both liquid and solid parts). This will also give a nice texture.
Any sweetener is fine. I used coconut sugar, but you can replace it with maple or agave syrup or even white sugar.
